Wash with warm water and detergent after each use and then dry. I recommend at least once a month recoating with Tried & True Danish Oil (linseed oil, FDA approved for food contact) price per 16oz. is $7.95 plus shipping at LeeValley.com. Direction on the Tried & True Danish oil state to apply a thin wet coat on the woods surface for five minutes. I personally would leave the linseed oil on the surface for fifteen minutes, and then wipe clean with lint free 100% cotton cloth. Leave to dry for 8 – 10 hours and then buff the surface again with a lint free cloth. It is worth the extra effort when you see the results from buffing the cutting board. Inevitably scratches will be left from the cutting knives used on the surface of the cutting board, which can easily be removed with 150 grit sandpaper and then sanded with 240 grit sandpaper.
